Inocuidad es la característica de un alimento (incluyendo agua) en no representar un riesgo para la salud del consumidor. La inocuidad de los alimentos engloba acciones encaminadas a garantizar la máxima seguridad posible de los alimentos. Las políticas y actividades que persiguen dicho fin deberán de abarcar toda la cadena alimenticia, desde la producción al consumo.

Standards Map - Your Roadmap to Sustainable Trade
Standards Map provides comprehensive, verified and transparent information on voluntary sustainability standards and other similar initiatives covering issues such as food quality and safety. Standards Map aims to strengthen the capacity of producers, exporters, policymakers and buyers, to participate in more sustainable production and trade. Users of Standards Map can identify standards or codes of conduct by product/crop and country/region of export or import, review the main features of the selected standards and codes, generate comparisons of standards' content requirements, to self-assess themselves against standards requirements of relevance, enabling a quick understanding of gaps. Lastly, users can save and share their self-assessment diagnostic report with standards, certification bodies, and other actors along the value chain. Standards Map contains over 120 standards that cover over 80 sectors and operate in more than 180 countries.
